Characteristics: colorless, transparent or white in a glassy state, in the form of flakes, granules or powders, easily soluble in water, insoluble in organic solvents, and strong hygroscopicity. It is easily hydrolyzed into orthophosphate in warm water, acid or alkaline solutions.
Usage: PH regulator, stabilizer, quality improver, emulsifier, water retaining agent, puffing agent, etc.
Application scope: Widely used in beans and canned fruits and vegetables, it can stabilize natural pigments, protect food color, emulsify fat in canned meat, maintain uniform texture, improve water holding capacity in meat, prevent fat spoilage in meat, and add beer as a softener to clarify the liquor and prevent turbid water without sedimentation.
